muffin mayhem

Happy Friday friends!

Quick life update: I have been super absent from the blogosphere lately thanks in large part to my husband’s miserable job.  Does anyone remember that movie Life is Beautiful?  Where the dad basically makes the Nazi Concentration camps sound like a fun summer camp for the sake of his son?  Well imagine how the son felt when he found out what it really was.  That’s kind of how I feel about Anthony’s current job, if Anthony were the son and his future bosses were the dad.  It was made out to be this shiny amazing opportunity, when in reality they work their employees to death, and their Boston office is, and I quote from a co-worker of Anthony’s, “a revolving door.”  Not only is it negatively affecting him, it’s so bad it’s even starting to affect me.  So I haven’t felt too motivated to jump on here and write.  Thankfully though, he will hopefully be giving his long thought-out notice today and we will finally embark on the beginning of the end of this prison sentence that is his current employment, praise Jesus. 🙏

ANYWAY…

Another element that’s been absent from my blog besides its writer is the anecdotal evidence of my complete & utter incompetence in the domestics department.   If you think about it, my WHOLE BLOG was basically missing without the collective Undomestic and Mrs. 😂🤷‍♀️🤦‍♀️

Welp, allow me to give you both with the chocolate chip muffin debacle of this past Tuesday.

The afternoon began like any other: looking at other people’s gorgeously baked creations on Pinterest and arrogantly thinking I was capable of recreating the same.

Spoiler alert: I’m so not.

I was currently binging 13 Reasons Why on Netflix and so it’s fair to say my head wasn’t exactly 100% in the game when I kept running back to un-pause the show while butter warmed up or dough at at room temp.  But, in my defense, in this particular recipe, while they put sugar on the ingredients list, they forgot to mention it in the directions.

While baking or cooking, I am a directions reader.  The ingredients list is merely for my grocery shopping and a tool to revert back to to consult how much I need when I’m reading the directions and adding things to the bowl.  So chances are, if it’s not in the actual directions, it’s not going in the bowl.

Everything was going great, so I thought.  The dough was looking light and airy, and I was so sure this was going to turn out to be the best muffin recipe yet. 😎

Until I was literally putting them in the oven, and I remembered not using any sugar.  At all.

So back into the bowl they go.  Along with the cup of sugar that they so rightfully deserved. 😂🤦‍♀️

So after I mix that in with my hands despite the directions specifically said “dont overmix” (👍) I finally had them oven ready.

In they went, looking slightly more like muffin dough, and I was eagerly awaiting them being done.

All’s well that ends well, right?

Wrong, they are hard as rocks and need to be microwaved before eating. 😂

Pro tip: carefully read the ingredients and the directions.  Maybe even go so far as to plan ahead with an order of operations and gather the ingredients before starting, rather than running around the kitchen gathering per each individual direction. 🙋‍♀️

However in my defense, it’s still unknown whether the problem was the sugar afterthought, or my arch nemesis, the electric oven from hell. 🤔

  1. I think people intentionally mess with their recipes just so you can’t duplicate the photo on Pinterest.
    Do you use an oven thermometer? It’s worth the investment to see just how far off your oven is. I learned this lesson when we bought our house which came with a 1960’s Kenmore freestanding double oven that the guy at Sears told me they never made. That sucker was off by at least 25 degrees. I used it for 5-6 years. I don’t miss it.

    1. Oh my gosh. That’s an amazing point. I never thought of that!! That makes me feel a little better about my cooking skills, or lack thereof hahah 🙂

      I don’t use one! But that’s a great tip, I will have to put that on my shopping list! 25 degrees can really affect your cooking time!!
